Real exceptions: modeling chocolate and ganache

Modeling chocolate is made by blending melted chocolate with a glucose or corn syrup base, and that already introduces moisture into the mix, so it's conditioned to accept water in a way plain melted chocolate isn't. A small amount of gel color can be kneaded in while it's still warm and pliable. Painting gel onto the surface afterward doesn't work as well, it tends to bead up rather than absorb.

Ganache is chocolate emulsified with cream, which already contains water, so it can also take gel color as the pigmenting agent if it's properly made and fully emulsified. Primarily, though, chocolate colors like ChocElite are still the reliable choice, the same one that works for any chocolate application. Either way, add color gradually once the mixture is smooth and fully combined, not while it's still coming together.

Dark chocolate vs. white chocolate

Dark chocolate normally isn't tinted the way white chocolate is, the cocoa itself is too dark for a color to read true, so the typical approach is finishing it topically instead, luster dust or edible glitter for tone, shine, or accent. If you specifically need a bright, true hue, color white chocolate and use it as an accent, a drizzle, a swirl, or a layer, against the dark.
