Natural food coloring is color derived from plants, fruits, and minerals rather than synthesized, formulated for buttercream and royal icing. It's roughly three to five times weaker in raw pigment strength than a synthetic gel and more sensitive to heat, light, and pH, so it's built up gradually into a batch instead of added all at once. It typically lasts about a year unopened, carries a real printed expiration date, and works in fondant too, just with different working properties than a gel.
What natural food coloring actually is
Natural food coloring is color derived from plants, fruits, and minerals rather than synthesized. It tints buttercream and royal icing without synthetic dye, and it's water-soluble, so like a gel it works in icing but not in chocolate, that still needs an oil-based color. Common natural pigments include turmeric, paprika, beta carotene, red beets, and anthocyanins, plant compounds concentrated to maximize color potency.
Each pigment behaves differently, an anthocyanin doesn't behave like a beet-based betalain, which is why every natural shade is formulated color by color rather than mixed from one universal base. The tradeoff for going plant-based is strength: natural color is roughly three to five times weaker than a synthetic gel and more sensitive to heat, light, and pH, so reaching a deep shade takes more product, added gradually, rather than a few concentrated drops.

Natural colors typically last about a year from the date of production, with one exception: Dahlia, Ruby, and Lavender have a shorter shelf life, around 8 months. Every bottle carries a real, printed expiration date rather than an open-ended one. Keeping a bottle refrigerated once opened often helps preserve its color integrity, but it doesn't necessarily extend the actual shelf life, those are two different things. If a color has separated and won't remix after a good shake, or the smell or texture has changed noticeably, that's a sign it's broken down and time to replace it.
A few different things can cause browning or greying. First, natural colors naturally oxidize, the same basic process that browns a cut apple, and heat can cause browning on its own, which is part of why naturals are steered toward icing and decoration rather than baking. Second, they're sensitive to light and pH, an anthocyanin behaves differently than a beet-based betalain, and pushing concentration up to chase a deeper shade doesn't just intensify the color, it can reveal an undertone that was always there. If a color comes out muddy or dull rather than rich, check the recipe's acidity and build the color gradually rather than adding more all at once.
Taste, smell, and allergies
How much a natural color carries the taste or smell of its source ingredient varies a lot by how it was made. Some are specifically concentrated for pigment, others are closer to desiccated fruit or juice, and that processing difference is a big part of why quality varies so much across the category. Deodorizing processes exist, but not every product uses them, so even a well-processed natural color can carry a faint note, especially at the higher doses needed for a deep shade. Purple shifts, navy is a stretch, and fondant still works
Purple is always a blend, whether natural or synthetic, and that's why it fades or shifts instead of just dulling evenly. In natural purple, the color comes from blending two different plant-based ingredients; UV and pH affect each one differently, so one often fades faster than the other, shifting the shade rather than just fading it uniformly.
True navy is virtually impossible to reach with the naturals currently available, and that's worth setting as the expectation going in. It isn't flatly out of reach for a customer who absolutely needs to get close: starting from a deep blue base and adding a touch of red or a deeper blue, with a heavy pigment load, can push toward a deep, dusky blue. But it takes real expertise, and it still reads as dusky rather than a crisp, true navy.
Fondant, on the other hand, is straightforward: natural colors can be used virtually the same way as synthetic gel, kneaded into fondant directly. What changes is the working properties, natural color carries more liquid and less concentrated pigment than a gel, so reaching a deep shade means kneading in more color, which can leave the fondant tackier than a gel-tinted batch. Judge the final shade after it rests, natural pigments deepen as they dry.
