Shelf life, and why it browns or grays

Natural colors typically last about a year from the date of production, with one exception: Dahlia, Ruby, and Lavender have a shorter shelf life, around 8 months. Every bottle carries a real, printed expiration date rather than an open-ended one. Keeping a bottle refrigerated once opened often helps preserve its color integrity, but it doesn't necessarily extend the actual shelf life, those are two different things. If a color has separated and won't remix after a good shake, or the smell or texture has changed noticeably, that's a sign it's broken down and time to replace it.

A few different things can cause browning or greying. First, natural colors naturally oxidize, the same basic process that browns a cut apple, and heat can cause browning on its own, which is part of why naturals are steered toward icing and decoration rather than baking. True navy is virtually impossible to reach with the naturals currently available, and that's worth setting as the expectation going in. It isn't flatly out of reach for a customer who absolutely needs to get close: starting from a deep blue base and adding a touch of red or a deeper blue, with a heavy pigment load, can push toward a deep, dusky blue.
