What food coloring do you use for chocolate?

Chocolate needs a fat-soluble color. ChocElite is specially formulated for chocolate and candy melts. Gel and other water-based colors will not work, because the water will cause the chocolate to seize, meaning it locks up and turns thick and grainy. ChocElite comes in twelve shades and colors without changing texture or flavor.

Is gel food coloring oil based?

No. Gel food coloring is water based, which is why it will not color chocolate. Water is what makes chocolate seize. For chocolate and candy melts you need an oil-soluble color. ChocElite is our oil-soluble line. It is specifically made to be mixed into chocolate and fatty icings.

What is oil based food coloring?

Oil based food coloring is color carried in an oil rather than water, so it blends into chocolate, candy melts and anything else fat based without causing it to seize. Water-based colors such as gels and liquids will not mix in. ChocElite is our oil-soluble line, made for exactly this.

Can you turn gel food coloring into oil based food coloring?

No. It will ruin a batch of chocolate if you try. Water and fat do not mix, so no amount of stirring converts a gel into an oil-soluble color. Use a color made for chocolate instead. That is what ChocElite is for.

Why does chocolate seize when you add food coloring?

Chocolate seizes because water and melted chocolate do not mix. Adding a water-based color, even a small amount, makes the chocolate lock up and turn thick and grainy. A fat-soluble color like ChocElite blends into the cocoa butter instead, so the chocolate stays smooth and fluid.

How do you color white chocolate?

Melt the white chocolate first, then stir in a fat-soluble color. ChocElite is formulated for chocolate and candy melts and blends in smoothly. White chocolate takes color more readily than dark, so start with a small amount and build. Avoid gel and any water-based color, which will cause the chocolate to seize.

Can you add food coloring to candy melts?

Only a fat-soluble one. Candy melts behave like chocolate, so a water-based color will thicken and ruin the batch. ChocElite is made for this and stirs into melted candy without changing the consistency. Add it a little at a time until you reach the shade you want.

Can you color chocolate frosting?

Yes. Chocolate frosting can be pigmented with both water-based and fat-soluble pigments. Unlike chocolate by itself, it will not curdle or seize up. That is why a gel works fine in a chocolate buttercream but will ruin melted chocolate.
