How to Get a Natural Blue for Buttercream and Royal Icing
Blue is the hardest color to find in nature, which is exactly why a good natural blue feels like a small miracle. For years there was almost no stable plant-based blue. That changed recently, and you can now get a real dye-free blue if you understand how the pigment behaves.

Why natural blue behaves the way it does
Very few plants make a usable blue pigment, and the ones that do (spirulina, and newer sources like butterfly pea flower) are among the most fragile pigments there are. Heat is the main enemy: spirulina blue starts breaking down around 47 C, which is why natural blue struggles in anything baked. Light fades it faster than most colors, and some natural blues shift with acidity. The good news is that the palette of approved natural blues widened in 2025, so the science is finally catching up to the demand.

Technique
- Keep it cool and un-baked. Blue is the least heat-tolerant natural color, so use it on buttercream, royal icing, and decoration, not in batter you will bake.
- Build the color gradually. Natural color is 5 to 7 times weaker than synthetic, so add more than feels normal to move from pale to true blue.
- Let it dry before judging. The shade deepens as it dries.
- Protect it from light. Store and display out of direct sun to keep the blue from fading.
- Keep the recipe near neutral for the cleanest blue, and lean on Arctic for a stable result.
Common mistakes
- Baking with it and expecting the blue to survive (heat is blue's biggest enemy).
- Using too little and calling it pale blue (build it up).
- Displaying in direct light and watching it fade.
- Trying to color chocolate with it (use a fat-soluble color for chocolate).
