How to make ganache ... with Master Elites?! You heard us right! Master Elites, while not fat soluble and CANNOT color chocolate, can absolutely color the most beautiful ganache you've ever seen! Why? Because the heavy cream inside of ganache activates the raw pigment food colors!

MAKING GANACHE

Ganache is simply tempered chocolate mixed with heavy cream until silky smooth! It's amazing to use for drip cakes specifically, which is what you see us doing here for these Mother's Day Bundt Cakes! It can be a little tricky to accomplish at first, as you will panic when you notice the chocolate trying to seize as you add in your heavy cream ... but FEAR NOT! It is completely normal and will blend out as you continue to mix thoroughly with your spatula. 

What you'll need:

  • 1/4 - 1/2 Cup of Heavy Cream 
  • 6 oz. of white chocolate (Ghirardelli used for this demonstration)
  • 1 tsp. of Butter (if you want to add - but we did not)
  • Master Elite of your choice (here we used 1/32nd of a tsp of Sassy Pink)
  • Glass Bowl
  • Spoon or spatula for mixing

Instructions:

  • Add your Master Elite to the heavy cream separately, allowing the color crystals to breakdown and fully bloom. Set to the side.
  • Melt your white chocolate in intervals of 15 seconds until fully tempered.
  • Warm the colored cream to the same temperature as the chocolate. 
  • Take your heavy cream and add it in slowly to the melted chocolate, stirring with a spatula continuously. 
  • Don't panic when the chocolate seizes, just keep stirring consistency until you accomplish a silky smooth ganache!

MASTER ELITE TIPS & INFO

If this is your first time purchasing Master Elites, understand the color you see in the jar is raw pigment food coloring - only activated by moisture.  For example, "Master Elite Lime" looks like a burnt orange inside of the jar! Once in contact with moisture, the most vibrant lime green comes through! 

Master Elites are NOT fat soluble. They cannot color straight chocolate. Well they can, but it will not be the vibrant tones you always see on Instagram! Again, by adding heavy cream to your tempered chocolate when making ganache - it activates the Master Elite brilliantly.
