For this popsicle cake tutorial and video, we will be demonstrating how to cast chocolate into a popsicle mold, how to achieve vibrant icing colors and how to achieve an ombre effect with your icing! These advanced techniques will level-up your cake decorating kills!
ACHIEVE VIBRANT ICING COLORS
Products Used Are Linked At The End: Lilac Master Elite and Hawaiian Blue Master Elite!
Master Elite Food Colors are INCREDIBLE for any type of buttercream, but you need to first ACTIVATE the color! As you may have noticed, Master Elites are raw pigment food colors and the color you see in the jar is not ultimately the color you will get when using inside of your confection! They must be activated by moisture. The Master Elite will bloom instantly when in contact with moisture!
Courtney uses the "melting method" when tinting her Swiss Meringue Buttercream with Master Elites. You can find the FULL TUTORIAL on the "melting method" at the link below!
Remove a small portion from your master batch of buttercream to a microwave-safe bowel. Add in small amounts of Master Elites (Here she used Lilac Master Elite and Hawaiian Blue Master Elite) and then microwave fro 5-10 seconds. Mix the powder color until fully dissolved, you will see a very deep / concentrated bowel of color and then little by little add it back to your master batch of buttercream. Please note you may not use the entire small bowel of concentrated buttercream, only add until you achieve your desired tone!

COLORING CHOCOLATE WITH ELITES
Products Used Are Linked At The End: Tiger Lily Elite Painting Powder
For the popsicles on our popsicle cake, we will be casting white chocolate in a popsicle mold! You can find these molds anywhere, but especially on Amazon! Our Elite Colors (not Master Elites) are fat soluble and perfect for coloring chocolate! Since Elite Colors are activated colors, what you see is what you'll get. So you will need to add MORE Elite Colors to tint any ingredients, including chocolate.
We only recommend using Elites for coloring chocolate, since they are fat soluble! Master Elites are best for coloring LITERALLY everything else! The EXCEPTION is Master Elite Black and White, which ARE fat soluble! They are the only two colors in the ME Collection that are, however.
Elite Colors in general are more versatile than Master Elites, as you can also use them to dry dust, paint and even airbrush! Linking some important TUTORIALS for you below to understand how to use the Elite Collection!

COLORING GANACHE WITH MASTER ELITES
Product Used: Orange Master Elite and Red Rose Master Elite
If this is your first time purchasing Master Elites, understand the color you see in the jar is raw pigment food coloring - only activated by moisture.
Master Elites are NOT fat soluble. They cannot color straight chocolate. Well they can, but it will not be the vibrant tones you always see on Instagram! It will be muted tones, since they are not activated by oils or fats. For coloring chocolate with The Sugar Art Products, you'll want to shop the ELITE COLLECTION (click here)! Again, by adding heavy cream to your tempered chocolate when making ganache - it activates the Master Elite brilliantly.
