For Mother's Day I made Julia Child's QUEEN OF SHEBA CAKE! I scoured the internet looking for the easiest recipe I could find, and landed on Mon Petit Four, Reine De Saba Recipe. This recipe gave me the confidence I needed to try a quite difficult cake for the first time (completely by myself) and you know what - I think I nailed it!

The meringue was honestly the most challenging part of the process, which I had to try TWICE, and still couldn't get it perfect ... but like I always say, you'll never grow if you don't challenge yourself. So my encouragement to you this week: try something NEW yes, but something difficult. You'll feel so rewarded in the end for just taking the first step.

What you'll need:

  • 3 egg whites
  • pinch of salt
  • 1 tbsp granulated sugar, (15 grams)

  • 1/2 cup unsalted butter, (115 grams) softened
  • 2/3 cup granulated sugar, (150 grams)
  • 3 egg yolks
  • 4 oz dark chocolate (72%), (114 grams) melted
  • 2 tbsp brewed coffee, (30 grams)
  • 1/3 cup almond meal, (26 grams)
  • 1/4 tsp almond extract, (1.25 grams)
  • 1/2 cup cake flour, (62 grams)

  • 2 oz dark chocolate, (57 grams)
  • 1/4 cup unsalted butter, (57 grams) room temperature

  • shaved almonds, for garnishing
  • unsalted butter, softened, for pan

The instructions are quite complex, so please follow the link below:

None this time! This was a special project for my mother and mother-in-law. Truly a gift from the heart! But you could of COURSE add DiamonDust to any confection! For a full tutorial on DiamonDust, CLICK HERE.
