ED'S PINK LEMONADE COOKIE RECIPE
INGREDIENTS
- 2 sticks butter softened
- 1¼ cup granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1-2 teaspoons lemon extract ( this is your preference, we used 2 tsp PK Lemon Drop Elixir)
- 3 cups all-purpose flour
- ½ teaspoon salt
- 1 teaspoon baking soda
INSTRUCTIONS
Preheat oven to 350 degrees Fahrenheit

In a large bowl with a hand mixer or the bowl of a stand mixer along with the paddle attachment, blend the butter, sugar, and lemon extract until light and fluffy.
- Mix in large egg, vanilla, and lemon extract.
- In a medium-size bowl, stir together the flour, baking soda, and salt.

Add the flour mixture into the butter and sugar mixture in ⅓ increments, blending well after each addition of flour. GO SLOW with paddle.
- Add The Sugar Art Hot Pink Food Color (click here) and mix until combined
- Roll cookie dough into 1 inch balls (maybe a little less, play with the size for the mold).
- Prep Lemon Mold (click here) with a light spray of Pam.
- Press cookie dough down into the lemon mold cavity, only going halfway up the cavity (leaving room for chocolate later).
- Bake cookies in the mold in a preheated 350-degree Fahrenheit oven for 15-18 minutes, making sure to rotate the sheets halfway throughout the baking process.
- Remove and allow mold to fully cool.
- Adding Chocolate On the Back Of Cookie:
- ** Color 10 oz. white chocolate (we use Ghirardelli) with our Choc Elite Yellow. Once the cookies have fully cooled in the mold, then fill the warm chocolate in one of our piping bags. Gently pipe the yellow chocolate on top of the cookies (while in the mold) until it's just below the edge. Do this for every cookie. Once the chocolate has fully cooled, wait at least 1 hour, then de-mold. **
